We think the best way to prepare this highly nutritious pasta is with an equally nutritious sauce. Take some sweet cherry tomatoes and roast them in the oven. Fry some garlic and red onion in a pan. Add your roasted cherry tomatoes to the pan with some veggie stock and tinned tomatoes (or passata works too!). Leave to cook until the sauce becomes nice and thick.
PlantX Tip: If you want to make this sauce even healthier, roast some other veggies with your tomatoes (like bell peppers, eggplant, or zucchini) - or throw in some spinach while the sauce is cooking in the pan!
