Sauté some sliced button mushrooms (ideally farmed locally) in half a tablespoon of organic olive oil and a plant-based butter alternative, season with plenty of salt and ground black pepper. We think these mushrooms work best with a combination of thyme and nutmeg, but herbs de Provence would also be a great choice.
