Locally sourced wheat is blended into traditional coarse-ground semolina flour and tenderly kneaded with fresh, mineral-rich spring water. The pasta is then air-dried slowly at a low temperature.
This pasta gets its distinct and delicious wheat flavor from the classical bronze die used to cut it. This extrusion method means that the surface of the pasta is porous and rough with a ridged perimeter; a perfect canvas for your favorite sauce to cling on to. Cooking Instructions
For 1lb pasta, bring 5qts water to the boil with 2 tsp salt. No need to add oil, just give the pasta the occasional stir to avoid sticking and drain the water after 11 minutes. For al dente, take the pasta off the heat 2 minutes early. Don’t forget to keep a cup of that starchy pasta water to add to your favorite sauce for that restaurant-level touch. Toss together with the pasta for 2 minutes and enjoy! Choose penne for a chunky vegetable of meat sauce, or use for a casserole dish for a pasta that retains its structural integrity even after a blast in the oven! For something a little different, penne is perfect for a cold pasta salad- just don’t forget to rinse off the starch after cooking.
